Hearty Vegetarian Spaghetti Sauces

For those who have chosen a meatless lifestyle or wish to reduce their fat intake, the following hearty sauces are an offering from my kitchen to yours. The ingredients are easily obtained from natural or Chinese specialty food stores. Fast and easy to make, these sauces are really a healthy main meal with spaghetti serving as the side dish. Make them and you will understand!
Hearty Sauce

Saute cubed tofu or tempeh in tamari (soy sauce) and
olive oil or soy margarine, use sharp edge of spatula to
cut in small crumbly pieces. Add more tamari or oil as
needed until slightly crusty and browned. Add cut
vegetables and stir cook for two or three minutes.
Add spaghetti sauce.

Natural Burger Crumble Sauce

Both Nature Burger and Love Burger dry mix in packages
are a little too strong flavored and textured for our family.
To remedy this problem we add steamed cous-cous to lighten
and make it go farther. Steamed cous-cous is made by adding
parched wheat grain to a quart pan of boiling water, placing the
lid on and removing from the burner for approximately five minutes.

Cous-cous Extender

After five minutes steaming cous-cous with lid on, add to
1 package of Burger mix. Add 2 tablespoons oil, 3 eggs and
2 tablespoons tamari. Form into flat patties, taking care to
round the edges and lightly fry with soy margarine or high
quality oil.( Cold pressed).

These burgers are delicious served with all your favorite
trimmings, or can be crumbled and used in a hearty, heathy
spaghetti sauce. One idea that works well is to make a few
extra burgers and use them a day or two later crumbled in a
sauce or added as is without the sauce to rice or macaroni.
These sauces can be used as a topping for spaghetti squash or
other pastas. This is fast food/healthy food cooking at it’s best.
